I had never seen this sake before and was curious about the specs of this sake, which is an unfiltered, unpasteurized sake with a raw yeast yeast base, so I tried it. According to the label information, it is 19% alcohol by volume with a sake degree of 10.5 and an acidity of 2.4, which is a moderately dry score for a nama-shu. The impression I got from drinking it was that it had the richness of the original sake and the freshness of the unpasteurized sake, but the core flavor was the umami of the rice.
