New Year's Eve Shugetsu Tasting (1) I was going to go to Yizizishin Tasting on Monday, but I went out to do some shopping 😅 Mr. Maehara, the new toji (chief brewer) of Shuzuki, was there. Freshly squeezed raw sake! There is no description but it is a special honjozo. It has a dark taste, but also has acidity and sweetness. Shiboritate junmai namaishu This is a special junmai. I felt it was more robust than the first one I drank with aluzome. Shiboritate Junmai Nama Shuzake This is supposed to be a special honjozo too. It was said to be Nakakumi. It has an alcoholic taste, but the acidity is also impressive. It is easy to drink despite its high alcohol content. Junmai Daiginjo Nama Sake This is the first time they used No. 10 yeast. Until then, they used different yeasts such as No. 7 or No. 9 depending on the year. I have had several Junmai Daiginjos in the past, but this was the most delicious with the most robust flavor. It's a type of sake that can be drunk with food or on its own. From what I heard, it seemed to be a sake with more of the toji's character than other sakes. Except for the Junmai Daiginjo, I was impressed by the acidity of the above three sakes as a whole. I was so surprised that all the sakes were better than the previous year and the year before that I couldn't make a quick decision like before 💦. To be continued...
