I like Tasake. I like special junmai. And Tasake's own sake rice, Kojo-nishiki? I had no choice but to drink it!
The aroma is a little milder than the usual special junmai, but it has a sweeter aroma than usual, like that of pears and apples. The brewing water is Aomori's soft, slightly sweet water. The sweetness and umami of the rice comes through with a gusto as in the usual Tokubetsu Junmai, but the pear-like aroma and sweetness are even more pronounced. It is also more sharp and dry than the usual special junmai. It is a special junmai that is more receptive to thicker flavored foods.
I definitely want to drink a bottle of Kojo-nishiki special junmai again next year. Thank you again for your hospitality this evening!
