I had soba and sake during the day, but I drank this at night 😆.
Let's start with the standing aroma. It has acidity and a hint of rice ear. When you put it in your mouth, there is a citrus-like nuance for a moment, followed by a light acidity in a smoothness. Finally, there is a slight bitterness with a hint of ear of rice flavor. Unlike the fruity, sweet and umami taste that is typical of Nabeshima, it has a reserved taste. It is suitable for a mid-meal drink.
Serve with grilled chicken. The salty flavor of the yakitori grilled over binchotan charcoal and the light sour taste of this sake spread in the mouth in a good balance. Delicious 😋.
Rice used: Yamadanishiki produced in Yoshikawa, Hyogo Prefecture.
