The first thing that hits you when you open the bottle is the aroma. Sweet and fruity, it is juicy like a lychee on the palate. The acidity and umami spread slowly, and the aftertaste is refreshing. The slight piquancy accentuates the taste, making it a perfect bottle for a hot day. How can such a fruity flavor be produced with only rice, koji, and water? Kouei Kiku, you're not just an ordinary guy after all 🍶✨. A friend of mine from Saga is going to India for a post, so I chose this Harujion as a bottle for his send-off party. I paired it with striped hokke, pickled Chinese cabbage, and boiled qinggengcai. They all complemented the juiciness and freshness of this sake. It was a night when the loneliness of sending off the guests and the tenderness of the sake sunk in.
