My wife told me that the area where the sake brewery is located is a good source of tongue flatfish and rape blossoms, so I decided to combine them with simmered flatfish and rape blossoms with shrimp and chirimen 👍.
The color is almost transparent. The aroma is slightly sweet and alcoholic.
In the mouth, there is a hint of sweetness as well as the aroma, followed by a crisp bitterness, and finally the umami spreads.
Serve with simmered flounder. The fluffy and light flavor of the flounder and the sweet and spicy flavor of the stewed flounder bring out the crisp and spicy flavor of this sake, increasing its umami. It goes well together 😋.
Next, I paired it with the rape blossoms with shrimp chirimen. The bittersweet rape blossoms harmonized with the bitterness of the sake, making it even more delicious 😊.
It was a snack that anticipated 🌱spring😍.
