Hosui's Yamahai Junmai.
Hosui is the brewery where Mr. Yamakami, the current toji at Sanko Masamune, met Mr. Takagaki, and when Mr. Takagaki moved to Sanko Masamune, his apprentice, Mr. Yamakami, moved with him.
Hosui sake is not sold in the Kanto area, so we ordered it from them.
The first aroma is rich and sweet with a hint of acidity.
In the mouth, it has a rich sweet flavor with a good lactic acidity.
It has a rich but clean sake quality with no cloying taste.
When warmed up, the sweetness expands and the acidity rises, which is also delicious.
It is similar to the mellow, sweet and sour Tamagawa (Aneshu😽) sake, which is also delicious 😋.
