We have completed our 7th (tentative) lap of Japan for the time being, given that Okinawa is on hiatus for a few years ✨.
The last stop will be Ishikawa Prefecture. I'll be drinking Kaga no Tsuki, the honjozo type I've been drinking a lot👍.
When I opened the bottle and poured it, I could feel the aroma of sugarcane and its refreshing aroma.
The mouthfeel is crisp, but the mushroom-like flavor and mature umami gradually spread out.
The balance of umami, sharpness, and softness. The depth of flavor, even in a honjozo, is truly Ishikawa sake.
The aftertaste is also clean and smooth!
As I gradually approach my 10th round, I can't stop being excited to meet new brands that I haven't seen yet...!
