This is the second cup at CHUIN for the second time since April.
This is Koryu Aiban from Niigata Prefecture's Kochiyo Sake Brewery.
Takaragi has become a common sight these days.
Unlike Takachidai, Takachiyo, and takachiyo, Takagun is a performance-oriented standard sake released by Takachidai Shuzo, which does not reveal the rice polishing ratio or the rice used to make the sake, but releases a super-cost-effective sake as a regular sake.
This is the first time I have takachiyo.
There is brewing alcohol added.
In both the photo and in the bottle, until you pour it, you may mistake it for a light cloudy sake, but the bottle only looks sandblasted (frosted) due to perspiration, and when you pour it, it is a clear sake 🍶.
The appearance is clear crystal.
The aroma is extremely mild.
It starts with the sweetness of rice, then spreads to a fruity sweetness with a refreshing acidity and a strong flavor of koji.
The finish is crisp and clean, with a hint of bitterness typical of aluzome.
The overall impression is of a refreshingly light sake, a Niigata sake with a pinch of sweetness, acidity, and bitterness.
It was the kind of sake that I would like to drink casually with a meal or when chatting with acquaintances and friends.
