かふんしょう
Wakanami" brand is brewed by the young team Wakanami. The white label is a Junmai Junmai sake. Yamadanishiki from Itoshima, Fukuoka Prefecture, and Yume Issho from Misumi, Fukuoka Prefecture, are used.
On the first day of opening, it has a mature and sharp impression, but it gradually opens up and stretches out nicely as it is exposed to air. The aroma is of ripe bananas. When it is included, it has a broad flavor with sweetness, which slowly and gently spreads with a good acidity, and then slowly recedes in the same curve as it spread. This is definitely a junmai ginjo sake to be enjoyed in a "wine glass" while slowly turning and opening the sake! Delicious!
