This will be a comment from an amateur sake lover. Today, here is Senkou, which is based on a creation from the Edo period. They are trying to make an old and new sake. If this tastes the same as it did in the past, it will be quite delicious and flavorful. It is a heavy, dry sake, but it has a wonderful balance that leaves you feeling refreshed. Today I made homemade dried gourds and processed fish to make sushi, so I paired it with a sake that I thought would be a good match, and the sake was as robust as the fish and shoyu. The alcohol content is not high, but it has a robust flavor. I am thankful that I can drink good sake in good health today.
