Risshuchu...Winter starts today according to the calendar. Although the mornings and evenings have become a little colder, we spent the day indoors in short sleeves. I decided to enjoy seasonal foods and delicious sake while watching my partner. The sake was Hakkaiyama's freshly squeezed raw sake. The seasonal side dish was persimmon with cream cheese, prosciutto ham, and black pepper. I was thinking only about sake and snacks while working.
Hachikaisan's Echigo-de-hiro has a fresh aroma like a little yogurt and a beautiful clarity. In the mouth, it had a fresh acidity and a hint of sweetness typical of freshly squeezed sake. It also has a lightness that is typical of Niigata sake. Delicious.
As for its compatibility with a slightly elaborate snack...well, it's not so good, is it? The sweetness of the persimmon drowns out the light sweetness of the sake. No, but the light and dry sake refreshes the palate that has been sweetened by the persimmon.
