This is Kanae Junmai Ginjo Summer Orikarami from Shinshu Meizou in Ueda City, Nagano Prefecture.
In the vein of Shinshu Kamerei, we tried a summer sake from the same area 🍶.
A kanae is a metal vessel with three legs, and this is a limited edition sake brewed by three brewers who are serious about making a sake that surpasses Yamagata's Jyushiyo.
This is the first time I've ever had a Ding, but it's a sake I've always wanted to try 😎.
According to the information from the brewery, the rice used for the sake is Hitogokochi and Kinmon Nishiki, both of which are made with reduced amounts of agricultural chemicals.
The appearance is warm crystal.
It is said to be orikarami, but there is almost no hint of orikara.
The aroma is a fruity ginjo aroma.
When you drink it, it starts with a sweet taste accompanied by a crisp acidity, followed by a fresh and thick umami taste that stays for a while, then the acidity rises again and becomes sharp, and the acidity lingers for a long time.
From the aroma, one would think it was a fruity sweet-umami, but it is a type of sake that pushes forward with its full-bodied umami and crisp acidity.
It is not thin, as is often the case with summer sake, but rather has a darker taste, with a strong summery acidity and a thick, robust umami, making it very interesting.
It was a very interesting taste. I would definitely like to try other types of summer sake as well, and I could feel the quality of the sake.
