Kabishin...a soft sweet sake that was the favorite sake of a girl who was my drinking buddy when I was young, and now that I'm all grown up, we're still drinking buddies.
But that's beside the point!
Be careful when opening the bottle! The bottle was opened slowly, and it made a nice squeaking sound... I enjoyed it so much that I didn't make any siphon ❗️ sound!
The aroma is not strong, but when you put it in your mouth, you can smell a hint of koji, and the aroma of rice.
Then the umami of the rice spreads, and although you expect a heavy acidity, the taste is refreshing.
This is delicious!
The image I had of Kabishin was one of gentle sweetness and a soft mouthfeel, but this is different and delicious!
I must tell my drinking friends about it. ❗️
