Shoun Kinryu, which I drank the other day and enjoyed.
I got the original Kinryu (20BY) before the name and label were changed.
This Kinryu is very rare because only the already shipped bottles are available. There may be some left in Miyagi prefecture.
The name "Kinryu" comes from the Kanada area where the brewery is located and the dragon, which is believed to be the god of water.
The brewery still adheres to the tradition of cold brewing and small brewing, and continues to preserve the traditional techniques of the brewery.
The top-tasting aroma is a mild ginjo aroma.
The mouthfeel is slightly sweet with a thud of umami! Slightly acidic. There is a slight sake-like aftertaste, but it is cut off by a firm bitterness and a light astringency that comes later.
Yum!
The transparency of the sake is well maintained, and the taste is classical. It is a bottle that shows off the traditional spirit and the earnestness of the toji.
