It's been a long time since I've had Tasake 😁 but what a strange phenomenon that something that was not available in Iwate Prefecture where I live is sold in my parents' home in Saga Prefecture 🤔.
But that aside, let's get right to it. The nose is fresh with a grain-like aroma and a hint of sweetness and acidity.
In the mouth, there is a fresh and refreshing sweetness and acidity, with a good umami flavor and a good bitterness at the end that is typical of new sake. The sweetness and umami are stronger than I had imagined. After a while, the sourness disappears 🫢.
With freshly rolled salmon. The concentrated flavor of the dried salmon and the crisp taste of grated daikon (grated radish) bring out the sweet and umami of this sake even more 😋The sake goes down well 🤤I think we're running out 😅This is indeed my personal favorite sake 😍.
