They use seven different yeasts, hence the "rainbow" color.
The first impression was of a fruity, dark taste, followed by a complex flavor. It's quite aggressive! A new generation feeling!
This is the sake recommended by the store owner to go with the yellowtail sashimi.
I also added some iburi-gakko cream cheese and the store's famous menchikatsu. It was delicious!
