I've had 18 Mori in the past, but this is the first time I've had Tagaji's at home.
I do drink Tagaji when I go out.
The gasiness is strong. It has a good balance of sweet and spicy with a strong umami. The acidity in the second half leaves a lasting impression. I like it because it is a combination of modern and classic sake.
When I drink it again, the sweetness is strong, but there is also a lot of bitterness.
After a week, the sweetness is almost gone and only bitterness and pungency remain...
