We opened a mouthful of Jikin Hachitan-Nishiki today and enjoyed it right away!
It has a clear sweetness, followed by a soft acidity and bitterness. None of the sweetness, acidity, or bitterness stands out, but the balance of the three tastes are in harmony with each other and are intricately intertwined to create a wonderful umami taste. The aftertaste is very refreshing while leaving a fruity aroma in the nostrils.
It is a beautiful sake that leaves a lasting impression, not a strong statement, but still tastes great. ☺️
