We will have it with cold sake. The color is clear and pale yellow with no hint of aging. The top-tasting aroma is very complex with a unique caramel-like aged aroma and various aromas like burnt ashes. The breadth of the overtone is incredible, and various aromas dance around in the nostrils. I almost feel like I'm going to lose consciousness 😳. The taste is also complex, with flavors of dried fruits, nuts, and ripe fruits. It has a silky and creamy feeling in its robust flavor, and a refreshing acidity tightens the taste in the middle, making it extremely delicious 😋. It is a gem that will get you hooked on sake even more if you take the time to drink it face to face. The brewer who came to the tasting and sales was pleased to hear that it is a sake for connoisseurs. He asked me to drink it heated to 45-50 degrees Celsius, so I measured it with a sake heater and thermometer. The top aroma was citrusy, the acidity was a bit assertive, and the flavor was more complex. I want to tell him to drink it because I don't have the vocabulary. Hi Nemuchi 😃 Daishichi is unquestionably delicious, but the taste is so complex that I always have trouble describing it 😅I think I'll use my knee every time I drink Daishichi 🤣.
