I don't think I could resist drinking any of the lineup this time for years if I had them at home 😁.
I really liked the berry sweet and sour taste of Jikin's Senbon Nishiki.
Jikin is often said to have a hard taste and is often aged for a short time, but I wonder how it will turn out with long aging🤔.
The appearance is crystal with a hint of yellow.
The aroma is moderate in this case, with a nutty, woody, aged aroma, but later on there is a clear, fruity aroma that is typical of Jikin Senbon Nishiki.
The mouthfeel is smooth.
The taste has a sweet flavor with a ripe berry-like sensation, and from there the sourness spreads and finishes.
Even though it has matured so much, it is still sweet, sour, and delicious 😊.
I have the impression that the freshness of unfiltered raw is gone and it has become softer and more cohesive. ☺️
The aroma had a slight sense of maturity, but I couldn't detect any significant change in the flavor 😳.
Maybe Jikin has a gradual change in flavor when aged 🤔.
