The aroma is subdued. Sharp with a structure typical of Yamada-Nishiki. On the first day, there is an elegant gasiness. The overall image is one of a mix of aroma, bitterness, and umami in a high register, with the acidity holding it all together. The bitterness is stronger than expected.
