The aroma is soft, which is typical of sake. When you put it in your mouth, you can feel sourness and bitterness along with minerality in the full flavor, and the overall aftertaste is crisp. Suitable for a mid-meal drink 🍶.
I served it with grilled salmon with butter and soy sauce. The combination of the plump salmon with the richness and saltiness of the butter and soy sauce will help the acidity and alcohol to dissipate from the nose and give the wine a mild taste, making it even more delicious 🤤.
Next, I tried it with grilled salmon with kara shimayo. The rather crisp flesh and the oil and acidity of the mayonnaise complemented the acidity of the sake, giving it a refreshing aftertaste.
