The acidity is effective. But it is more smooth than the steamed rice. It is dry and easy to drink. If you want to drink it as a sake, I think this is the one 🤔. We compared two doburoku (doburoku) produced by UNE, a certified nonprofit organization, one made with steamed rice and the other with rice powder.
