Pei
Yamazan Sake Brewery in Ueda, Shinshu.
Sake brewing had been difficult for a long time, but it was restarted by the successor of the business.
This is a light nigori, unfiltered, unpasteurized sake. It is a classic junmai sake that combines the refined rice flavor of Hitogokochi with a fruity aroma, acidity, sweetness, bitterness, and other complex flavors, and has a lingering aftertaste that easily relaxes the palate. Very tasty! This sake is probably not distributed nationwide at this time.
The label is simple but very stylish!
