Sono Shangiku Leap Day -Special One- (Kou-tatsu) Super limited unfiltered unpasteurized sake 2024 It is as precious as the Olympics once every four years, and I couldn't open it very often, but I took the plunge and opened the bottle. I opened the bottle and drank it cold. When I poured it into a glass, a great number of McIlroy bubbles adhered to the entire surface of the poured sake. The aroma is a gorgeous ginjo aroma that seems to rise to the top of the glass. The mouthfeel is gaseous and has a refreshing sweetness on the tongue. The mouthfeel is juicy at first, but before the depth of sweetness and umami can be felt, the acidity keeps it from spreading, giving the impression of a clean, refreshing taste. The sharpness of "Gohyakumangoku" may be the reason for this. The final taste is a moderate bitterness that brings it all together. As the temperature rises, the richness of the honey is felt, and a sense of alcohol is also felt, giving it a sake-like character. This is a luxurious sake made by polishing Gohyakumangoku up to 29%, which is the 29th day of the leap year, and we hope to have it again in four years.
