The aroma is slightly green apple. The sourness comes first, and then the complex umami spreads out mixed with bitterness, and as the temperature rises, the umami becomes even stronger.
Although it has been fire-aged once, it is as fresh as a fresh sake. It is smooth, refreshing and delicious. ☺️
