Just in time for a Koryu drinking contest. The first bottle of Kuroryu I drank was Ginkaze 2018 and I got the impression that it was very good, so I have very high expectations for this bottle. It's made from Hokkaido Ginkaze, but it's aged for a year and a half in the cellar before being released, so you could say that it's an introduction to the aged varieties of Kuroryu. The aroma is melon with a strong acidity. Compared to the earlier Daiginjo, it certainly has a more profound flavor. When you put it in your mouth, it tastes very clear and almost tasteless at first. After a little while, perhaps because the temperature has been raised, the taste is refined and rich in umami. The final taste is more lingering than sharp. The most amazing thing is that even though it has the same alcohol content of 17%, you can hardly feel any sake flavor. The flavor changes little by little and the more you drink it, the more delicious it becomes.
