Kangiku is the first in a long time to be released in the Occasional series, True White.
This luxurious Junmai Daiginjo is made from 50% polished Omachi rice produced in Okayama Prefecture. From the moment the bottle is opened, it releases a mellow aroma. When poured into a glass, you will notice extremely fine bubbles.
In the mouth, it has a pleasant freshness, but at the same time, it has a rich sweetness and powerful umami. It has a strong flavor, but thanks to the subtle acidity, it does not feel heavy. The second half has a firm bitterness, which helps to set the back palate. From the initial aroma to the lingering aftertaste, the usual Kangiku-like nuances are consistent, making it a consistently delicious sake.
The label on the back of the bottle says, "A taste that expresses the character of Kangiku" and "brings out the potential of Omachi beautifully," and that is exactly what it does.
It is a gem of a bottle that beautifully combines the qualities of Omachi and Kangiku.
In past years, the orikarami True Red has also been released, but unfortunately it was cancelled this year. This may be due to the release of a new product, Sake Mirai -Wonderland-.
Kangiku is released consistently every month, so we can always enjoy fresh sake, but when the pace of drinking slows down, we can no longer keep up with it. There are currently six bottles of Kangiku alone in the refrigerator. It is a happy scream.
