I had this sake at a sake bar in Toyama under the direct management of Masuda Shuzo. I've seen the concept of sake matured in wine barrels a few times, but this was my first time to taste it. I'm sure you'll be surprised at how much the aroma changes just by using a different place to age the wine🤯There's the aroma of the barrels in the nose, and of course there's the sweet and sour aroma of white wine reminiscent of Niagara, which should not be present in the sake itself, because the barrels were used to make wine. In addition, it has a mellow aroma reminiscent of old wine because it has been aged, and I felt that it was an aged wine with a strong flavor like Shaoxing wine. I personally prefer sake aged in wine barrels to sake brewed with wine yeast🍷.
