At Asahi Shuzo, I tasted Kubota Manju's own yeast brewed Manju Junmai Daiginjo.
I also bought a bottle of Senju Junmai Ginjo to compare, so I tasted it today.
All of them have the sweetness I like.
The in-house yeast is the most rounded and mellow. It is very clear. I want to make it the star and savor it carefully.
I had the impression that the acidity became stronger in the order of Manju Junmai Daiginjo, then Senju Daiginjo.
