I wanted to drink a refreshing shuwashuwagashi🫧 and when I fished in the fridge, I found a blue hijirizumu that I was supposed to have drunk in the summer...! I had bought Yamadanishiki as well as Shiro Koji.
I took off the guard and floated the stopper a little! The bottle was opened with a great sound.
The aroma was slightly koji, grapefruit, and a sweetness like cotton candy.
When I sipped it, I found it was sweeter than the white koji active sake in the same blue bottle. It is like a grapefruit with sugar 🍋🟩 and has no noticeable acidity. Rolling on the tongue, you can feel the umami of rice. A little bitterness at the end.
There is a nice sharpness and a clear aftertaste, but there is almost no acidity, which gives the impression of sweetness.
It is not sweet and fruity, but more like sugar water. It would be easier to drink if it had a little more acidity, but maybe I stored it too long.
Maybe it's a bad idea, but I tried drizzling a little lemon 🍋, but the flavors seem to be separated...this is my mistake!
After leaving it for a few days in hopes of a flavor change, the cotton candy type sweetness became less noticeable and transformed into a light, deliciously refreshing taste of rice! The foaming also helps, and the dryness increases a bit.
I like this one a lot, and it was probably a good decision to leave it.
The sweetness of the grape-like taste comes out towards the end 🍇 Overall, it was a fun sake with a variety of different tastes.

I've only had hiji💪rhythm🎶 once, but it was somewhat lackluster at the time 😅I might want to try a fresh schwa type!

I don't have many, but I think they vary quite a bit from type to type 🤔This one might not be enough 💦The mother liquor type is low alcohol but quite impactful, so by all means 😋May be sweet for you, J&N 😝.
