ひでたか
This sake is a part of the special line called EXTRA CLASS of Kanbai Shuzo.
The name is taken from the meaning of "eight umami" which is brewed by three kinds of rice grown in own fields.
I don't know if it has eight umami, but it has a good balance of sweetness, sourness, spiciness, umami and sharpness.
We had it with eel, and it gently washed away the fat of the eel, making it the perfect sake for a meal.
