It has a dry but plump aspect. There's an astringency that resembles citrus. There is a light bitterness in the aftertaste, and you can feel the acidity that stimulates your tongue. It's not sweet, but there are elements of that on the palate. It is a Junmai Daiginjo, so I thought it would be clean, but the flavor remains. It is very easy to drink, and I thought it would go well with sashimi.
The rice used, Misoshiki, is a cross between Yamadanishiki and Miyamanishiki. It is described on the back of the label as a high-grade sake rice from Akita. I was told that this sake is suitable for long-term aging if not opened and kept refrigerated! I wish I could have enjoyed that one as well.
After a day, it seems to be a bit sweet!
