connieThis is the newest brewery in Japan, Choshu Shuzo's Tenbi from Yamaguchi Prefecture.
I was lucky enough to get it at the Mimasu Sake Shop in Akabane.
It's a shame for me to say this, but
The sweetness is tight and very elegant! And it is very sharp.
I don't like sake that's too sweet, but it's not too flashy, and it's really, really good! I know it's not a good analogy, but it's a sake that goes well with food, on a par with Tasake, Tobiroki, Hakurakusei, and Tanaka Rokugo.
It really exceeded my expectations and surprised me! I should have bought it in a bottle. That's the only regret I have.
