＜A calm, gradual umami and a hint of sweetness from the acidity.
This is a limited edition sake from Aizu Shurakukan Watanabe Sota Shoten, a sake store in Aizuwakamatsu City.
The aroma is beautiful lactic acidity with a hint of sweetness and umami. It looks delicious.
On the palate, it has a clear, soft acidity and a mildly sweet flavor. The umami that gradually emerges in the latter half of the bottle is also good. The aftertaste disappears gently and cleanly.
The previous Hirotogawa Junmai Ginjo had a powerful flavor with a strong alcohol taste, but this one has a calm and gentle taste with gradual umami. It is delicious.
The entrée was pickled firefly squid. How could it not go well with this? When you drink sake after the firefly squid, the rich salty taste of firefly squid will make you feel even more relaxed. Ohhhh!
If I were to use a Ghibli analogy, I would say Fukuo-san from "The Witch's Delivery Service. He is the owner of the bakery and the husband of Ms. Osono. He is not flashy, but he does a good and steady job. He may look tough at first glance, but he's kind and cute, and he's also very mischievous in a low-key way when people aren't looking.
