I finally got around to drinking some of that Kamizo I've had my eye on for so long! I tend to shy away from it because of its high price, but I bought it the moment I found it because I really like muddy sake to begin with.
First of all, the top aroma has a ginjo aroma, but the hint of ginjo aroma is only slightly perceptible. This may be why it has a subtle fruity flavor.
I think it has quite a lot of cloudy ingredients, but I was surprised to find that it was smooth and silky rather than thick and smooth when I drank it. I think this contributes to the overall softness.
First, a moderate sweetness appears, then the umami of the rice spreads, followed by a refreshing acidity, and finally it finishes with a bitter taste. The rice flavor from the muddiness of the rice is strong, and it is delicious on its own.
This is one of the most elegant tasting wines I have ever tasted, so in that sense, it was worth the price.
