I enjoyed Shinomine doburoku that I drank last month, so I repeated Shinomine. Since there are many new sake and arabashi at this time of the year, I wanted to drink a mellow, traditional sake made from the traditional sake brewing process, so I decided to try this brand.
The aroma is of lactobacillus yogurt, which is typical for a sake made from the traditional sake yeast yeast yeast.
The taste is surprisingly dry and refreshing. The mouthfeel is mild, perhaps due to the influence of the sake's traditional "nama-hashiroshi," but it does not have the mellowness typical of the sake's traditional "nama-hashiroshi" style.
The alcohol content of 17% gives the impression of a strong sake.
I regretted that I had wrong preconceptions about this sake due to the manufacturing method and past brands of the same brewery 😅I was not able to enjoy this sake with cream-based Western food, which I was only aware of the sake's natural yeast, because the clear dry taste of this sake did not go well with it at all.
Once again, I realized the importance of understanding the taste from the label and asking questions to the waiter🤔.
