It has been a long time since I have had Atago no Matsu.
The last time I drank it was almost two years ago, and it was "Atago no Matsu" written in hiragana and "Harukoi" in pink nigori. This time it was Summer Love.
This sake is an annual summer sake. But actually, last year and the year before, it was social distance and the two hearts were separated. This year, the hearts are sticking together! It's not completely settled yet, but it's very emotional, isn't it?

The aroma is of delicious rice, soft sweet banana, and refreshing lactic acidity.
On the palate, the refreshing acid-sweetness is soft and gentle. From there, sweetness and umami come in a slight breeze. It is a beautiful, refreshing, and gentle sake.
As the temperature rises, the umami also opens up. It is also good because it has a deep and gentle flavor.
If I were to use a Ghibli analogy, it would be the love between Jiro and Nahoko in Karuizawa in "The Wind Rises. It is gentle and tender, yet deep love. It is the same in that it becomes deeper as time goes by.
