Slightly sweet to bitter with a soft sweetness in the aftertaste.
It is said to be a sake called "unfinished" sake.
It is a well-balanced sake, neither too sweet nor too bitter.
We enjoyed it with grilled beef shabu-shabu and stir-fried tofu with chives and dried bonito flakes in soy sauce.
