Chokki
Teisho Ao Tamanao Junmai Ginjo
60% 15%, M310 yeast, 720ml, 1650 yen
I visited Teisho for the first time in about a year.
I bought Ao. Last time I bought Midori, but it was not my favorite and I failed.
The first sip.
It has a clear and tasty taste. It also has acidity. It has a little bit of the same popular millet flavor that Midori has. There is something unique about it, like a natto (fermented soybeans) feeling. Hmm? Is it because it is Mito yeast? No, that has nothing to do with it.
The sweetness is brown sugar type. The firmness of the water quality also feels mellow.
Midori felt like a cheap sake as good as a paper carton, but Aoba is easier to drink.
The rice is made from Yamagata-grown Tamanao.
I always think that Teisho puts too much effort into their labels, and I think it is disproportionate to the taste. I think a simple label would be better for this flavor.
