I've been drinking Yamagata sake a lot, but this is surprisingly my first check-in with Sake-no-wa: sake brewed by Dewazakura Sake Brewery as a commemorative sake for the birth of Dewa Tsannin, a rice suitable for sake brewing developed in Yamagata in 1995.
Not only the sake rice, but also the koji mold and yeast are Yamagata originals. While the initial aroma is mild, the flavor and fragrance are sweet and green apple-like. It has a crisp and refreshing aftertaste.
