It is also different from conventional sake in that it is brewed in wine facilities, has a rich aroma like white wine, and is sold in white wine bottles. It is very rare and difficult to obtain due to its limited production time and short quality assurance period of 3 to 5 months. Sake is not sold directly, and if you wish to purchase it, it is very important to be persistent and frequently check the information of the distributors.
Sogapère Ephis is characterized by the use of Association No. 1 to No. 6 yeasts and the use of sake brewing techniques. In particular, yeasts No. 1 to No. 5 were thought to have disappeared with the times, but Obuse Winery preserved them for 70 years. Each brand has produced unique flavors that make the most of the characteristics of each yeast. The sake rice used is Miyamanishiki grown in Nagano Prefecture."
