I recently had a tasting exam and just barely passed. It was a blind tasting where you had to answer questions about appearance, aroma, taste, suggestions for two pairing dishes, and reasons why the sake would be a good match. When I took a whiff of the aroma, I didn't know what it was and I was in a mild panic. I completely misread the quality of the sake and was stunned when I saw the specs after the test, and thought it was carbon-filtered with alcohol.
