I bought it locally last fall 🍂.
I thought I had to drink it as soon as possible, but I didn't have a chance... it had been sitting there for quite a while 😅.
I was afraid to open the bottle💦.
I actually had the same bottle at Kagota @ Aizuwakamatsu back then. I asked them to open the bottle when it arrived that day...
My memory is a bit hazy, but it was delicious 😆.
It still has a freshness to it, but it has a slightly matured aroma. When you drink it, you get a long bitter aftertaste from the lactic-acid-like aromatic ginjo aroma 😌.
The sweetness is only felt for a moment, and basically it is quite dry.
During this time, you can feel the solid structure typical of Izumikawa 💪.
I still think it's best to drink it early 🤔.
I think the situation makes a big difference, too.
