When served cold, it is full of rich rice sweetness and umami, with a slight gasiness, and a sweet aftertaste with sourness, followed by a long aftertaste of umami and a hint of bitterness. I was surprised at the sweetness and umami of this sake when it was cold ⁉︎ Lukewarm heating will increase the sweetness and umami, but it may not be well-balanced. It tastes great when heated, especially when cooled. It has a rich sweet/umami taste without the aged feel of rice, so it is very open-minded. It is a taste that all sake lovers should try at least once! The taste is so good that it makes me feel sad that I am drinking it alone. It's a pity that there is no one in the family who understands the taste of sake... Glad to share it with you at Sake-no-wa!
