I ordered a stable sake without knowing the specs.
It is a Junmai Daiginjo Shiboritate, directly pumped from the tank.
The sake is made from "gohyakumangoku" (five hundred million stone), so it is light, but it is gassy, juicy, and fresh, with sweet and umami flavors that spread out in a flash. The sweetness is rich and delicious along with the gaseous sensation.
I was quite excited when I saw the specs of the keyword "tamba nao kumi" (pumped directly from the tank), and it was definitely my favorite sake to drink.
We moved on to the next restaurant.
