Kijoshu made with 100% Hyakumangoku No Shiro produced in Ishikawa Low alcohol content (12% alcohol by volume) The aroma has a citrusy acidity and a rich sweetness typical of kijo-zake. Fruity, sweet and sour. The taste is not as sweet as expected, but has a clear sweet-savory flavor. The acidity is moderate and the aftertaste is refreshing. Overall, it is slightly sweet but refreshing and very easy to drink. Delicious! It is a kijoshu, but it is a new type of light sweet sake, not a typical mellow sweet sake. It is not a dessert sake, but rather a sake that is similar to a white wine that can be easily matched with relatively light fish and shellfish.
