Yamadanishiki from my favorite production area! This time it is Roku-no-brewery! In the past, the piquancy was strong and combined with umami, but gradually the piquancy is becoming milder and the umami of the rice and the minerality that is unique to San-do are becoming stronger and stronger. Since San-do has gone back to its roots in the traditional way of making wine, I feel that I am able to directly feel the umami of the rice more and more. It is strange that the taste becomes milder as the regulation goes up. I liked the taste very much. Thank you very much for the meal!
