Today we have a Junmai Daiginjo NOBU from Hokusetsu in Sado, Niigata❗️, a sake made in collaboration with the world-renowned lentoran NOBU❗️
The aroma is not very daiginjo sweet, with a slight sourness. A sip reveals a concentrated mellowness on the tongue followed by a dry numbness. Then, the sweet aroma of ginjo passes through the nose. ❗️ This is a quintessential sake made in collaboration with a restaurant. ❗️ It is great as a food sake. ❤️
